Is it possible to edit the amount of EXP, AP you need to level up and Gil you receive after battles?
I was wondering whether it's possible to edit the amount of EXP, AP you need to level up your skills/character levels?
Also, is it possible to edit the amount of Gil you receive?

I want to make my game a little harder by making it harder to level up and get Gil.

Thanks in advance

Yes, it's possible using Hades Workshop.
Go to the panel "Party -> Stats": there's the Exp/AP requirements there.
For the Gil you receive, it's in the "Enemies" panel. You need to change the gil reward for each battle (you can tick the option "Edit Similar Enemies" to make it a bit faster.

Or you could just use cheat engine. It's alot easier and you can edit your experience totals and gil on hand values more directly.

I have some noob questions.
I have downloaded Hades Workshop and extracted it. But I cannot find any exe file (in the folders) to launch it. Do I need to put it in my game folder? Or do I need another program to open a file within the extracted folder? How can I open the interface?
