S3 would cover other topics like mecanim animation setup for the weapon and zombies, ammo and health pickups, sound, making terrain, camera effects, lightmapping, pausing the game, etc., so basically lots of simple stuff that beginners need to know.
I wasn't planning to have S3 on the Asset Store because it means that I'd have to keep the project up to date with each major Unity iteration, which isn't easy since then I'd have to redo the video tutorials.
I understand the issue with the Asset Store. Perhaps you could make the project files available for purchase, independant from the videos, or the Asset Store.
I like to fly over the Youtube videos at x2 speed, it's all I need to understand the code and manipulate it myself. But currently I have to stop every 5min or so and write it down.
Anyways, looking forward to S3, I really hope you manage to include UNET somehow.
