Here is my updated setup for Sailaway II.

I have gone with the theme of
  • Alt + for mizzen controls
  • Shift + for moving ballast, foils, and keel.
  • Ctrl + for interface
Just thought I would list them in case someone else finds them useful.

W.I.P so may change after I've sailed Sailaway II some more.

As someone who just bought a Winga 78 in real life and has little idea about sailing I was really struggling with actually controlling this game for about two hours. This setup is great and works around so many issues I felt the game has out of the box like looking away from the sails while you pull or ease a line with the mouse and all that nonsense. Now I can actually focus on looking at my damn sails and my telltales while I'm trimming. I actually start to enjoy the experience and trying to teach myself with books but no practical feedback was infuriating. I'm really happy I took a look in the forums here, this is a seriously great post!
