I will show you how to defend against destroyer (DD) with your submarine (SS). This is just one of the tactics so feel free to post some of yours here and I may add them to the guide (I will credit you of course).

Just swimming
Imagine this: You are swimming across the ocean in your SS...
then you decide to take a look around with your periscope...
But! When you raise your periscope above water you see this!
DO NOT PANIC!!
Just relax.. It is just a DD that is chasing you.. Yes yes it can destroy you within 5 seconds but hey! You just relax....Ok now get serious. Just turn your SS directly torwards the DD. Believe me.
Emerge to the first depth level (I assume that you are not that stupid and that you are already under water) or to the torpedo level (call it like you want). When you are about 0,3 - 0,4 miles away from DD (number on the upper left corner of the screen) RELEASE HELL ehm ehm I mean all torpedoes you have on the front.
Congratulations
You have successfully saved your SS. You shold get this ehmm view?
If you did not manage to sink it dont worry, just continue to the next chapter of this guide.
Release HELL 2.0
Just shoot your rare torpedoes and you are done
NOTE: I was too lazy to start a new game so imagine that ship is still floating :D

I have a few notes from playing this exact level on the original PC release:
1. it takes 2 torpedoes to kill a DD
2. Fletchers are wide enough that 2 torpedoes going straight at it will hit (and confuse the AI while you're at it
3. Clemsons are so narrow that 1 side of torpedoes can completely miss when fired straight ahead, so you have to adjust your aim to compensate

Sometimes I like to reverse facing straight at the enemy DD, surface to sea level and just unload on them from 0.1 or less away and then immediately go back down. usually their guns can't hit you when you're right up beside the other ship

My variant is to point towards them, then full reverse with the periscope up. They will run straight at you. If your next torpedo is from the port side, aim just port of the DD bow to it crosses the center line. The next shot, aim just to the other side of mid line. The DD will get confused as to which way to dodge. Since you are reversing, you get a bit of extra time to get away so you can wait a bit longer to shoot.

Well i guess its a ok guide, but better than that is just shutting off the submarine engine, so the enemy sonar will hear nothing, and will completly stop or otherwise try to circle the last area u sub was before.

Yes I forgot to mention that. I’ll do it when I return home anyway I wanted to say that you should spread those two additional torpedoes so that DD cannot outmanuever it.

Destroyers only need two torpedoes to be sunk, and while 0.3 or 0.4 is a moderately safe distance, they can still turn away and dodge your torpedoes. A more risky tactic is to wait until around 0.2 and launching two torpedoes, then crash diving down deep. Do not release closer than 0.1 or else the torpedoes will not rise in time to meet the ship.
