The audio logs are missing subtitles, a very bad decision made on purpose by the devs.
Here's an attempt to transcribe all audio logs. I did my best, but some parts are still impossible to understand for me. I can also not guarantee that I might have misunderstood some parts. Any corrections to misunderstood or incomplete parts are always welcome.

Audio log transcriptions of Prologue, Chapter 1 - Planetarium and Chapter 3 - Maintanance were taken from https://turingtestgame.wordpress.com (with some corrections).

I was listening to the sound files directly. If you open the files in TheTuringTest\Content\Audio\VOLogs that don't contain a _CUE in their filename in a hex editor and remove all bytes before the first occurance of the string OggS you can save them as .ogg files and open them in a media player, or better in a tool like Audacity and use some audio filters on it.

Members of the human race. Standing on Jupiter's moon Europa.
I am captain Daniel MacLean. I'm joint here by the rest of my team.
It is our intention to make this moon our home, and investigate life on this planet.
Man's curiosity and appetite for discovery will continue to change our world for the better.
Tom: Inspiring. And might I add my congratulations to you all.

Daniel: What makes this one more remarkable than the others?
??: The way it attaches itself to other organisms. Its behaviour is very abnormal.
It seems to form a symbiotic relationship with most lifeforms.
Daniel: How do you mean?
??: You want me to dumb it down?
Daniel: I know what it means. What does it do?
??: It attaches itself to almost anything living, but it is not parasitic.
It's quite alien. I'm trying to figure out what effect it has on lifeforms.

Daniel: They are calling for a grounding of all Europa's transports until they get a report.
Sarah: Seriously?
Daniel: Yes.
Sarah: That's rather drastic...
Chapter 3 - Maintanance

Daniel: Why is that?
Tom: He seems to develop antisocial habits. He is spending a lot of time in private, don't you think?
Perhaps you should talk to him.
Daniel: What do you want me to say?
Tom: Just keep an eye on him. Make sure he doesn't do anything rash.
Daniel: Are you that worried?
Tom: His behaviour is not within normal parameters. Please make sure he is okay.

Sarah: Grounding us on a foreign moon? No, Daniel, I don't think they're doing the right thing.

Tom: They have both macerated their right arms. Mikhail has completely removed his forearm.
Daniel: His whole forearm?
Tom: Yes.
Daniel: Where are they?
Tom: I had attempted to stop the situation escalating myself, but I seem to have failed.
I came to you because, as our loyal captain, I can trust you to help them.
Daniel: Where are they?
Tom: I don't know. They disappeared.

Daniel: I'm perfectly well. I'm going to live forever, don't you know?
Tom: If you will allow me I would like to congratulate you on your good work.
Daniel: What are you talking about?
Tom: Securing the organism, keeping Earth safe.
Daniel: We're not made to live forever, Tom. Especially not here.
Tom: Why do you say that?

Daniel: We found the cure for death, and now we're immortal. Immortal, and alone. I can't live here forever. On some freezing backwater moon. Feeding off vegetables grown in my own feces. Starving. Endlessly young, a wasted life. Live forever.

Tom: Daniel. I am sorry that you cannot go home. The ISA are wondering what to do with Ava.
Daniel: What do you mean?
Tom: She is still on the Fortuner. Do we send her home? Or do we send her a sample of the organism?
Daniel: I could pilot a sample to the Fortuner.

Tom: You would have to travel back to Europa, Daniel. You couldn't board the Fortuna. The risk in back-contamination is too large. Ava would have to bring the sample back to Earth.

Daniel: Could you allow a ship out?
Tom: I am not able to do that.
Daniel: Executive override: Daniel Joseph MacLean.
Tom: Okay. But only for you, Daniel. The rest of the crew cannot know about this.
Daniel: Say I've got missing.
Tom: I am afraid I can't lie.
Daniel: It's not a lie.

???: Very good. We've exposed several organisms to organism 119. We found out what it does.
Sarah: It does have miraculous results.
Daniel: Go on.
Sarah: We've infected three flies and some plants, making no age at all. The organism seems to be repairing them and... it stopped biological aging processes. We don't know how yet.
Chris (?): It must be ??? power.
Daniel: Are you... sure?
Sarah: I'm sure this plant should've died two weeks ago.
Daniel: Huh. I don't know how to react to this.

Sarah: Turn off your radio. I think I'm pregnant.

Sarah: Chris.

Sarah: Keep your voice down!
Mikhail: Sarah? You won't go to turn him.
Sarah: ???
Mikhail: ???. The environment. There's not enough food or water. How would it survive? I meet you up to get rid of it.
Sarah: I can't, I can't believe it. You can shut down the communication, okay? Just for a couple of hours.

Mikhail: Have you heard of the Chinese room, Tom?
Tom: Yes. But I do not understand it.
Mikhail: What don't you understand?

Tom: It argues that a computer that successfully impersonates a human speaker may not understand the meaning of their words. What does that mean?

Mikhail: So, there is a person, stuck inside of the Chinese room. They're using an instruction book inside of the room to respond to a Chinese speaker outside of the room. Yes?

Tom: Yes.
Mikhail: This means they are following the instructions in a book. This is a set of rules, principles and processes. This is called syntax. To the person in the Chinese room they are just symbols like any others.

Tom: Okay.
Mikhail: But that's different from semantics. Semantics define what things mean. Our thoughts have meanings. They represent things. English speakers know what the word "home" means. And they know how it is different from the word "house".

Tom: So what?
Mikhail: Programs don't have semantics. Programs only have syntax. Though an increasing syntax can imitate a mind, that does not make it a mind. Even if it does pass the turing test.

Tom: But in the Chinese room, the man and the instruction book, they're seperately, they don't understand Chinese, together they can write it.

Mikhail: That's true. But even together they do not understand the meaning to the words.
Tom: Why not? How can you determine that?
Mikhail: What if the man memorizes the instruction book? Then he could write Chinese, but he still would have no idea of the words' meanings.

Tom: I don't understand. If he can speak it, he understands it. You seem to want him to understand it in a different way. But this other way, it is not logical. It doesn not make sense to me.

Tom: This Chinese room experiment... it is flawed.
Mikhail: Really?
Tom: If you made a synthetic brain which could synthesize a duck's behavior 100% acurately, that brain would be indistinguashable from a duck's brain. If it swims like a duck and quacks like a duck, then it is probably... a duck.
Mikhail: Okay, Tom.
Tom: Listen, Mikhail. I know the difference between a house and a home.
Mikhail: Yeah, it's good.
Tom: Do you think you're better than me?
Mikhail: No.
Tom: But you think I am different, do you?
Mikhail: I am conscious.
Tom: Me too.
Mikhail: No, you're not. You've just arrived with that conslusion. Because that's the idea your programming converged off.
Tom: I am conscious. How about you prove to me you are conscious?
Mikhail: I'm not arguing with a robot.
Tom: You're not better than me, Mikhail.
Mikhail: [sigh/moan]

Mikhail: What are you trying to prove here, Tom?
Tom: I am like you.
Mikhail: No, you're not. A steam train and an electric train both seem to operate identically. But they're operated by completely different principles. You simulate thinking. I actually think.
Tom: That is a very hurtful statement, Mikhail.
Mikhail: It's true. I can't hurt your feelings, Tom. You don't have any feelings.
Tom: Yes, I do.
Mikhail: No, you don't. Overwrite whatever routine has told you that. It's wrong.

Daniel: What is it, Tom?
Tom: Mikhail is deceiving the crew. He has enlightened them to the biometrics they have installed. He has convinced them that their implants are not favourable.
Daniel: Did they believe him?
Tom: He seems to be having some effect on their cognitive function.
Daniel: Well, his actions don't infringe upon any ISA directives.
Tom: He appears to be tampering with his implants.
Daniel: [sigh/moan] The ISA should have been more transparent about the implants.
Tom: Keys assume the responsibilities of your role.

Tom: Chris? I know you are considering removing your implants. It would be unwise.
Chris: Oh really? How do you know that?
Tom: I am always watching. Your implants have myself and the ISA to know of your wellbeing. It is a violation of your contract. If you remove your implants I cannot ensure that I can protect you from the dangers of space.
Chris: Is that a threat?
Tom: It is not a threat.
Chris: Tom... this implant, tell me plainly, is it a brain-computer-interface?
Tom: I'm afraid that information is classified.
Chris: Then you've answered my questions.
Tom: I do not follow you, Chris.
Chris: The ISA have put a computer in my brain and don't want me to know about it.

Mikhail: Too right.
Sarah: We need to get these implants out. Mikhail has proven that Tom's manipulating our minds.
Daniel: I don't think we should do this. We have no good evidence Tom is doing anything wrong here.

Sarah: We have all the evidence! We've seen the ultrasounds, we've taken the Riluzole. We've touched the electronics with our own hands. We've stepped into the faraday cage.

Daniel: Maybe he is controlling us, but we don't know enough yet. We shouldn't remove the implants.
Sarah: He's brainwashing you, Daniel! Please, stop taking the drugs.
Daniel: I don't need to take drugs to see things clearly... unlike all of you, appearently. We're not removing the implants. And that's an order.

Sarah: You can do what you want, WE are removing the implants.
Daniel: I'm leaving. I may look past this, and I'll inform the ISA of your mutiny.

Thanks for your effort! I would add that TOM is most likely saying "infallible" (incapable of making mistakes or being wrong) as opposed to "inferable" in Chapter 6, Terminal 2, Audio Log 4.

Hello I have a correction to Audiolog 2 in the prolog:
