It sounds counter-intuitive, but consider the fact of how much it needs to move and the fact that for game mechanics to work in real time, water is significantly thicker than in real life, by about 10x.
It's futzed outside of actual mechanical transfer of power, because there's no computer that can hope to run that kind of physics simulation real time, so there's plenty of shortcuts :)
Yes, you are correct. In general boats and aircraft even in the game stick to a single gear. Most aircraft are more than happy with just a single 1:3 gearbox. If you need higher gearing, you should instead consider using less engine power.
As for boats, it's exceptionally rare to go above even 1:2, considering how much torque they require to move.
For your corvette question, the solution is fairly simple: add more engine power. There are other ways of dealing with this issue, such as installing a small rudder beneath the hull that helps lift the nose of the craft, which reduces the drag of the water increasing effective power output.
It is also perfectly alright to mix engine sizes, such as 2 large engines assisted by 2 medium engines (which is 2.66666 large engines in total).
