Bottle #1

(1) The first bottle is inside the house on the right after the first dropdown. You have to breach the door first. Before dropping down, take a look to the right side. You can see the barrel through a hole in the wall of the house and shoot it. (2) Proceed into the first map area and grab the bottle inside of the house.
Bottle #2

Underneath the first tome.
Bottle #3

In the tavern cellar.
Bottle #4 (and key for secret hideout)

In front of the village tavern. You can also pick up the key at the tavern entrance, it's hanging on the backside of the right wooden pillar of the canopy.
Bottle #5

Right next to the first grimoire.
Bottle #6

On the left-ish side of the village, quite below the area of the first grimoire.
Bottle #7

Before the dropdown to the temple, turn right. In the area underneath the bell tower.
Bottle #8

Near the entrance to the hideout.
Bottle #9

After opening the door to the hideout.
Note: Bottles #9 and #10 are inside the secret hideout related to the No Hiding Place challenge. Check this video how to enter the hideout.
Bottle #10

On a table in the secret wine cellar.
Note: Bottles #9 and #10 are inside the secret hideout related to the No Hiding Place challenge. Check this video how to enter the hideout.
Bottle #11

Up on the left in a small cavity.
Bottle #12
Bottle #13

(1) In the small ravine leading out of the second grimoire area, take a left through the reddish bush. (2) On the rocks in the waterfall.
Bottle #14

On the far right before entering the last area.
Bottle #15

(1) In the spiral staircase, look out for one side area seemingly covered with branches. Jump over and inside. (2) At the end of the corridor, in a chest.

A little backup strat I found for bottle 1, throw a bomb at the gap in the wall, triggering the barrel. Did it first try, but don't know how easy it is

First Bottle: Since 3.0 you can't hit the barrel through the door anymore. You have to shoot it before the drop. Go to the first drop, look right and you can see the barrel through a hole in the wall.

You can still open the door at #1 using a bomb, and it's not difficult to find one in this area.

it seem like on wine bottle 1 the barrel Glitches and you can hit it with anything

For Bottle 11 I'd suggest adding that the jump puzzle is located right before the drop, to find the location more easily. Spent a while looking at each rook to see if it was similar to the rocks in your picture.

I haven't played Beta, I was waiting for full release, hence, this knowledge wasn't accessible for me.

Book locations are common knowledge since Beta. There might be extra guides for those.

But there's a video guide now for people who need it.

Some of your stated locations require the knowledge where the tomes and grimoires are hidden, but you don't explain it in your guide.
