As far as I've seen, choosing dual wield has no impact on weapon complexity and shouldn't have had anything to do with your Scar's rendering.
What does have an effect is the "canvas" or world size in Gunsmithing. Save your gun (as there's no Undo) and try shrinking the X and Y axis; you may have to copy and move your weapon to be better centered, which is a pain but doable.
Also, make sure your gun isn't hollow! the weapon "complexity" is the total number of flat surfaces on the weapon, not the block count. So it also helps to simply get rid of little details that stick out, and simply paint them on weapon.
