It is really simple. All you need is file archiver software and that's it.
  • Go to directory where you have your game installed ("...\Steam\SteamApps\common\Edna & Harvey The Breakout\" by default) and then proceed to \data\ folder. There you'll find the file we need, speech_de.jar
  • Rename it like this
    speech_de.jar → speech_en.jar
    You don't really need original speech_en.jar, so you can just delete it.
  • Open speech_en.jar in your file archiver software and rename speech_de folder in it to speech_en
  • Launch the game and pick "English" in Language options
Simple enough, right? Now game has English text and original German audio.

NOTE: This game has quite major game-breaking bug and I suggest checking out my guide on how to fix it.

Hello! I own this game on GOG and this fix worked perfectly for me. It's important that you remember to also rename the folder inside the file you changed to speech_en.jar to match (speech_en). I used winrar for this and it worked.

To clarify, is what happens when you remove the original speech_en and rename _de the audio/dialogue disappears altogether, the subtitles appearing for a split second before disappearing.

I know this is two years later, but I tried this trick and it didn't work (and I can't stand the English already). Any idea how to fix it?

Just saw your fix after finishing the game. What I did was to just switch to german language and restart from the last save (the ending options screen where you can choose whether to go back to asylum or listen to Harvey and push doctor Marcel). Then credits appeared fine and I could get back to game menu.
Anyway, thanks for posting the fix. Surely comes handy to some.
