Overview
There are 57 weapons available in the game and 14 of them are not unlocked. I have framed all the unlocked weapons in red. Remember the appearance of the weapon and look up how to unlock it. The weapons are listed in the same order as here. :)

Toaster
Unlock the character Egg. Make a loop after defeating the final boss.
Harpoon
Unlock the character Seagull. To do that you have to defeat the boss Bogy.
Snowball Cannon
Unlock the character Penguin. For this you have to die once in the game.
Chain
Die by a Puffus corpse.
Mace
Do not open any chests in hidden or locked rooms until you finish the dungeon.
Polar MG
Win the chest at the shooting range in the secret room twice in one run.
Swarm Gun
Steal 20 weapons in the store.
Thistle
Use the blood donation machine 10 times in a row.
Crag
Don't take damage in the whole graveyard level.
Wane
Pick up 3x magma and finish at least one level with it.
Vengeance Gun
Pick up Guts and News tongue and keep it in your inventory for at least 5 levels.
Iceberg
Pick up 5 keys.
Banana
Skip 3 shops in the same run.
Ice Stick
Clean a level without shooting.

How do you get the key in shooting gallery room? There was a brief explanation before but I don't get how exactly bushes hint the order

So to 'unlock' the other guns, do you just have to use them at some point/buy them from the shop in any run?

The bushes behind the targets indicate what order you need to shoot them.
