Monthly profit = production (dependant on efficiency) x export price (listed in almanac) - budget (1 to 5 stars).
The game assumes you export everything eventually. So even if you use most of your tabacco in your factory the planatation will show identical monthly profit figures. In Tropico 3/4 they would be negative. (Used food is deducted from profit though.)
Import cost are separated cost on your almanac.
Since all buildings use the same logic to display profit you can perfectly compare all industries. Just realize that you can create additional profit or expenses by getting good and bad trade deals.
