get a plane
The first thing you should do is get yourself a plane. The easiest way to do this is to open your phone and go to "elitastravel.com" from the main menu.

Here you will find a number of different planes that you can buy. As long as you finish the main story, you should have enough to buy one.
Note that you can only buy a plane or helicopter in GTA V if you have a helipad or hangar to store them. You can easily get one after completing Trevor's quest "Nervous Ron", which sees him visiting the McKenzie Field Hangar. Completing the mission allows you to purchase the hangar for $150,000.

Fly a plane in GTA V
To fly an aircraft, you must first level the engine/rotors. Press the acceleration button (R2/RT) to stack it up and it should eventually start flying through the air. Once you're high enough you can hide the undercarriage by pressing L3.

You can then use the left analog stick to fly the plane up, down, or to turn it left and right.

As for landing a plane, you need to keep it as flat as possible when you lower it to the ground. Press L3 to release landing gear again and fully release throttle/gas. Start braking hard as you continue to lower to the ground.

If the plane bounces when it hits the ground, you'll have to go back and start the landing process all over again. It's all about slowing him down as much as possible, so once he hits the ground, he'll stay on the ground.
