Introduction
So, I have been trying to complete these two achievements and have come across a few discoveries. What I wanted to share were ways that helped me towards beating this mode. These may or may not help you with your process so try to experiment.

Guides
There is a plethora of guides/achievement walkthroughs and tips available on YouTube and Google. What I have been using recently to help me with the process is a video from The Guild of Awesome. A lot of the information is incredibly helpful, especially the locations of where food spawns. I advise anyone who tries to do this achievement to have this running in the background during transitions to other parts of the mall.

Dead Rising 5 & 7 day survivor achievement guide

If you are curious about encounters with survivors or psychopaths, the Dead Rising Wiki[deadrising.fandom.com] can help with figuring out the time frames of spawns. From the couple attempts I did, I had several psychopaths and survivors spawn in for both of the longer runs. It could be a bug or coincidence that this happened, but some of the spawns didn't happen at the time they were suppose to happen which made me have to change my plans accordingly.

Look online to see what is available so you can plan for this journey. Remember, 14 hours of strategic gameplay is required to do this. It is better for you to research before you go in blindly.
Beginning
One of the first things to do to complete this mode is obtaining the three health magazines. The best path I found to do this is by going to the Entrance Plaza, then the Wonderland Plaza, and finally the North Plaza. The video linked above shows the locations, but where I went different from what the video did was going down the hallway that Otis welds shut in 72 hour mode. From there I was able to immediately obtain the first magazine Health 1[deadrising.fandom.com] and have my first psychopath encounter Paul. It is possible to grab battle axes or katanas from Ned's Knicknackery to fight him, but you can also bypass him and go into Al Fresca Plaza. If you don't have any weapons, I suggest you grab the bike that is along the wallside and ride it to the other side of the plaza. Then enter the Food Court and ignore Carlito. Once in Wonderland Plaza, go to the next bookstore to grab Health 2[deadrising.fandom.com] and grab the second magazine. From there, transition into the North Plaza to obtain the final magazine, "Health 3"[deadrising.fandom.com] (says survival but helps with health.)

Once you have all three magazines, I found it best to start this journey in Leisure Park. This will be another psychopath encounter where you fight the Hall Family. There are several instances up to this point where you can grab weapons to hopefully aid you with killing them, but it is possible to hit them with your special moves (jump kick, knee drop, etc..) If you think range is better, try to sneak down to the gun store with the zombie crawl move and grab some sniper rifles to hit them at a distance. Once you kill them all, grab all the food and bring it to the pavilion roof and wait there until you need to eat. At this point, you can watch the video and follow what they do to continue forward.
Time
A factor to consider about this mode is time. As it mentions on the Dead Rising Wiki[deadrising.fandom.com], "Frank's health will decrease by one box every 100 real-time seconds, or one minute and 40 seconds. One box of health is equal to 20 game minutes. Frank, with the full twelve blocks of life, will lose all of his health and die in 20 real minutes (four game hours)." With this, you have a lot of down time while waiting for Frank's health to diminish. What I found to be ironic with this is the best way to play this mode is to not play when idle. For example, staying still and waiting for the health to decrease instead of instigation a situation where you are likely to get attacked. The question being is how do we entertain the time between each feeding?

Chores
While doing my first run, I was able to do certain chores while waiting for the time to pass. I would advise you set a timer when you begin at full health for 19 minutes (gives you a minute to run back and heal up. I set mine for 18 minutes just to be safe.) Keeping yourself busy will make the time go by faster then sitting at your PC and doing nothing at all.

Watch a Video/Listen to a Podcast
Keep in mind that it takes 20 minutes to drain your health completely so watching a couple videos or listening to podcasts can help with the time to go by. Any sort of leisure activity can be beneficial to this but these are what I did to pass time. If you do this, it might be better to use a different device then the one using to play Dead Rising on. You wouldn't want to have so many windows open and have the game crash.

Sleep
My first long run involved me doing an all nighter since I was impatient, of course during the last hour of the journey while I transitioned to a different area my game crashed causing me to restart the entire run. One thing I recommend is playing it in segments so you don't lose your sanity trying to do it in one run, and this is possible because of being able to pause the game. Even with not being able to save the game, being able to pause it allows for a player to leave and return to the game at a time that best suits them. Another thing is putting your PC in "Sleep" mode or power saver. This causes the game to still be paused while you are away for several hours and you don't have to worry about an accident happening that could unpause your game.

IF YOU TRY TO DO THIS, PLEASE BE CAREFUL NOT TO CLICK POWER OFF INSTEAD OF SLEEP MODE/POWER SAVER. I DID THIS TWICE AND HAD TO RESTART FROM THE BEGINNING!

If you do try this, I advise you make sure it works by trying it in the earlier part of the run. You wouldn't want to try this when you are six hours in the run and have an issue with the game trying to come back online. I didn't have any issues and I don't think others would have this issue, but make sure it works first before you go do it.

Discord
One thing I did a lot of was sit in Discord calls with my friends and let them watch me idle. For some reason, having others nearby to laugh or talk with made the time accelerate much faster than usual.
Weapons
Utilizing weapons can be a big part of this run or avoided all together. From my experiences, it helps clear dense herds in close quarters without being bitten as often as using your fists. This is a sort of trial and error you can do to figure out what best suits different situations. In general, the weapon I found to be most useful was the lead pipe. You can find several spawn locations for this weapon and upgrade it with the Engineering[deadrising.fandom.com] magazine. It isn't always a one shot kill, but the attack rate for an early weapon best suited me with taking down the Hall Family in Leisure Park
Safe Idle Locations
Being able to locate a safe spot to idle can be difficult. Luckily, the video shows several locations that are idle friendly for this run. However, from my personal experience I have notice a couple of instances where zombies had a moment of intelligence and found how to reach my location from their wandering sequence. I will mention below each spot that I found to be unreachable for zombies.

Leisure Park
Best location is the roof of the pavilion. After killing the Hall Family in the beginning, you can chill up there with whatever resources you want and be left alone.

Paradise Plaza
The video has two suggestions (Jill's Sandwiches and Colombian Roastmasters) that work for this area. I did however experience a couple of instances where zombies could come into the area I was idling and try to attack. If you want to take extra steps to prevent this, I advise you stand on the awning where the katana spawns and wait till you are out of food.

Security Room/Helipad
Personally, I didn't stay in this area long. I think in the beginning parts of this run, you could hunker down in the security room since zombies haven't spawned in there yet. Usually, my runs into these sections were quick so I didn't stay long.

Colby's Movieland
I found that chilling in any of the theater rooms was fine. Make sure the door is closed after scavenging all the food and you should be fine to idle.

Entrance Plaza
After grabbing all the food, I found the Everyone Luvs Books store to be the best location to hide in. Make sure all the doors are closed and you won't be bothered.

Side note, it's best you come here for a transition sequence that will happen when in Al Fresca Plaza. The cycling magazine will help so grab it before you leave.

Al Fresca Plaza
The gym that is near the Food Court is the best location to hid in. I will mention this again in the transitions tab, but use the bicycle to move around this area and grab food.

The video shows a window being broken. I strongly suggest you don't break any window in the gym. During my first run I did this and had the issue of zombies slowly coming in from time to time while I idled. Just use the door and cycle around to get what you need.

Food Court
The video says you should be fine in Chris' Fine Foods, and through the multiple runs I had no issue with idling there. If you want to take the extra steps, you could hide up where the first Carlito fight happens in 72 hour mode. Either way, you should be fine.

Wonderland Plaza
The video mentions Run Like the Wind being a great place to hide in. Both runs it worked for me, but if you wanted to there are two kiosk's closer to the North Plaza where you can sit on the very top (one of them spawns in an apple) and the zombies can't reach you.

North Plaza
Going to be completely honest, I try to stay out of this location due to the density of the zombies. I find that I loose a majority of my health trying to evade or slice my way through but it isn't worth it. Grab the food and find a location that is not in there to idle.

If you are trying to stay in this location though, there are a couple of abandoned locations that allow for you to close the doors. This method would make it so you don't have to worry about crashing while trying to load into another area.

Crislip's Home Saloon
Based on my runs, I didn't need to go into this location. However, the video shows that standing on the utility shelves seems to be a safe approach. I once again advise you minimize your time in the North Plaza so you don't risk more attacks in a dense location.
Transitions
This can be a tedious thing to do based on how you move, paths you choose, or if you have weapons or food available. I found a couple of ways to help with bypassing crowds but they are not always sure to prevent an attack.

Flying Dodge
What's nice about this is going into a crowd of zombies and utilizing a kick after this to do an AoE push on them. Crowd clearing will help with moving into dense areas with no weapons available.

Jump Kick
This skill can also cause an AoE of pushing/moving zombies in herds.

Zombie Crawl
Walking over zombies can help with not getting bitten. You can also jump off the last zombie you are on to propel yourself further away.

Skateboards
I didn't use these during my run, but I have noticed that some users use them for transitions. Stacking up the magazines with them helps buff them more.

Bicycles
I found that using the bicycle in Al Fresca Plaza was the best way of gathering food. If I am not mistaken, it is possible to obtain them in other areas of the mall but figured this would be outweighed by the use of skateboards?

As mentioned previously, one safe location is Everyone Luvs Books which has the Cycling [deadrising.fandom.com] magazine. I grab it just so my bike doesn't break while I do runs in Al Fresca Plaza, but if you want to you could use it in other locations where bicycles spawn. Afterwards I drop it for the inventory space.

Vehicles
You really don't need to utilize them for anything, except for one location in the service tunnels. If you are feeling brave, there are two milk cartons available in the butcher shop underground (where you rescue Carlito before he dies.) Otherwise you don't need them for anything.
Crashes
Before continuing with this section, it should be noted that I am by no means a game developer or coder. Whatever I mention is based on observations during my runs and how certain things could play out depending on what you do.

A thing to remember about this game is how old it is. I mention this because of a couple reasons I will state below, but specifically how this game runs is much different than titles being released today. As such, everything I mention is in relation to crashing or bugs I faced while trying to go for these achievements.

Cell Overloading
I use term cell as a way to define the different areas of the mall. Something I noticed is the random occurrence of cell overloading, which is caused from rapidly going into different sections of the mall. However, I found after multiple trials of doing this in different locations and with different cells, it isn't something that is consistent to happen but rather truly randomized. As mentioned in the Transitions tab, it is best to minimize the amount of cells you transition to decrease the probability of a crash happening to you.

Rendering
Another thing to note is rendering in locations and entities (this could relate to cell overloading.) When you enter a cell, the game has to render in entities based on a certain distance that the player can see. We can especially see this in the maintenance tunnels when the player is driving a car through a herd of zombies and then we have a break in the amount of zombies that are rendered in. This is because the game is playing "catch up" with where the player is by trying to render in zombies for the area/frame we now see.

I noticed no dip in frames when I did this but this could vary from user to user.

The issue of rendering is also dependent on a couple of other factors such as distance, direction, obstruction, and entity limitation. I happened to discover this during the last hours of my run however, but below I will show you something that can be done with rendering.

The picture below shows a numerous amount of carts being spawned from me being within a certain rendering distance from a zombie with carts.

When you wait in the room full of wine in the North Plaza, you are enclosed but still within a distance from zombies to spawn and be rendered in.

I will admit that I was running around in there which caused the camera to move around Frank while I idled. This of course caused the render and entity limitation to be activated at once with the distance being right at the border of where the zombie must spawn in but not fully be removed.

After a couple more instances of me jumping and moving around, even more carts spawned in. This did cause a dip in frame rate, but by this point I already got the achievement and it didn't really matter.

One other place I noticed this is in the Entrance Plaza where Paul spawns. There are two zombies, one with a propane dolly and the other with a cart that spawn over there that does this bug. I have found it beneficial to get Paul trapped in the carts or blowing up the tanks to kill him.

I am not a game developer or coder, so it is very possible that everything I said is inaccurate. However from the multiple attempts at this achievement I noticed it happening and felt as though it should be informed to others trying to do a run like this.
Final Thoughts
I know there are plenty of ways to go about this, but I wanted to share my experiences to hopefully help anyone trying to do this. Dedication and patience is what helps with making this goal possible, and from the multiple times I've had to do this it certainly has taught me a lot about myself.

Best of luck, and feel free to comment or share anything you want below!
