how do you open clams from inventory?

There are three levels of pearl AFAIK: raw, ordinary, and white sand. It seems that raw are not used in crafting but are decent in sale value. It also seems like the shells below the water line may have better yield than those on the sand, so look for both.

every island I land on I do a full lap of the shore first... up to about 35 pearls in teh box now

just circled island after reading this and found 10 raw pearls, 7 pearls and 1 white sand pearl out of the 40-50 clams i opened

Had no idea there were oysters to be opened. Is there a running list of stuff you can harvest?
