Step 1 - Delete the incorrectly applied hat
You could try to Unlock it, or Ctrl+Z to the point when you didn't "Lock" it
Step 2 - Spawn, Lock, and then Select the hat (DON'T USE ZERO NOW)
Step 3 - Press the CTRL button on the "Unknown" bone to deselect it

Step 4 - Zero your hats!

Does anyone know a fix for default slider that lets you use it after you re-opened a session

yep! the main goal is just to not touch bones that are not-shared

"Default" slider isn't a perfect fix because it acts like the "Zero" slider if you've reopened the session after spawning the model. Better option is to unlock the transforms, right click on the "unknown" group, and import the reference sequence. It should reset the bones to their default positions but still fit onto the model. Then you can lock the transforms again.

Also, its not just the unknown group that does this. It's any not-shared bones. Just make sure to deselect any unlocked bones before zeroing.

You can also select Unknown group and use the "Default" slider
