You need to access Toni's Office in the bar to acquire 3 pieces of evidence.

To do that, ensure you talk to Kevin to listen to his stories. Exhaust his dialogue on both visits to the bar. Do not spam Glen's Eyes as they will raise Kevin's suspicion, and to access the office, you need his suspicion to be at 0 (empty bar). When it is at 0, try to go to the office, and Boulder will note the goons by the door. Then talk to Kevin again and ask him about the goons. This will allow you to visit the office.
This is a timed sequence, and in my run all 3 evidences were in the desk. You have plenty of time, though. Simply open then close every compartment until you found all 3. If you leave a compartment open, Monique will notice it and this will lead to a Game Over.

You need to lockpick Vincent and Luca's trunks in Episode VIII to obtain 2 pieces of evidence.

Apparently to lockpick you need to listen to an audio cue, but for me it was a hit or miss. The way I went about it and that a guaranteed success was to test every combination until the lock flashed red. The correct combinations are: Vincent's car is 34 and Luca's is 35.
You can also lockpick Monique's car, as this leads to another achievement (UNBOXING!), but reading the 3 books will give you an evidence that will give you a different ending and 3 other achievements (FAST READER!, HERE COMES THE CAVALRY! and SUPER SLEUTH!). The combination of her car is 25

Go to the graveyard, and associate the following cards to the following evidence:
