My only point for potentially not, or at least playing on Apocalyptic, is loot rarity drops DO get altered on higher Difficulties so if you play on Easy you may not get very good gear as you progress. That being said, if you kept the Difficulty on Easy the whole way through, even without Epic Tier gear you shouldn't have any issues anyways even in the Crucible...
For the Secondary Adventure Achievement, you have to complete ALL side quests in one playthrough be it NG or your NG+. So any quests you complete in the first playthrough will have to be redone in NG+. Not the end of the world though. If you need to do side quests for Xp, do the "single task" ones & not the ones tied to finding Collectibles to save yourself the tedium; I list some good ones to do in Sequence 26 in the Forge Lands section.
I just wanted to add that on Book of the Dead Page #35 (Sequence 20), your way did not work for me. My solution was to go near the gap after picking up the bomb and then jump-throwing it. But you can also use the soul splitter to pass it across the gap between souls.
