The table style you see depends entirely on your ideology's style priority. In the ideology screen, styles are listed from left to right—when you build a new table, the game uses the leftmost style that includes a matching tile.
Importantly, already constructed tables won’t change style if you later adjust your ideology’s styles. To get the look you want, make sure your target style is prioritized on the left before building.
For a deeper dive on how ideology styles work – including how style dominance is determined and which objects are affected – I recommend checking out the official RimWorld wiki’s section on Ideology Styles. It’s full of useful details.
