This brief write-up describes how to unlock the various mini-games included in Brew Barons along with the required co-pilot configurations for doing so. I didn't see these answers anywhere else, aside from inferring their existence from certain achievements, so the goal is maybe other players can skip a few searches in the future and just use this as a reference.

Available after flight meter has been filled, and companion quest completed, between Ivor and Irena. Unlocks the Crazy Water Taxi achievement and boat driving mini-game in Valeigh.

Opens the large, docked Goliath aircraft for use in Valeigh after flight meter is filled between Nevena and Dijana, then the subsequent companion quest is completed. Unlocks the Guided Tour achievement.

Available in all friendly bar locations after flight meter and companion quest between Ena and Franci is completed. Unlocks Marketing Tips achievement.

Unlocks time trial race activity in Valeigh along with In the Prime of Life achievement. Available after completing flight meter between Valter and Nevena and completing subsequent companion quest.
