Extra Characters
You might have noticed that next to the majority of characters' portraits on the left side (Arcade Mode) or right (Versus/Training) is text that reads "Normal" and "Extra".

This is because that character has an alternate move set available. In most cases, the moveset in question is from a previous entry in that character's franchise (for example, Ken's EX version has his Super Street Fighter II Turbo move set) or an alternate move set a character has used before (such as EX Rugal pretty much having most of Omega Rugal's moves)

To select it, highlight the character you want and hold Start before you make your choice.

@Katros Nice find! I'm afraid I don't remember if I gotten any Perfects during that attempt. It might have been the case since I was doing it on difficulty level 1 (not 0) but can't say for certain.

Yeah getting Groove Points can be a pain. My method was to spam special moves, try not to use normals or throws as that can deduct points and use super combos to finish foes off. I was inspired by this guide: https://gamefaqs.gamespot.com/arcade/562996-capcom-vs-snk-millennium-fight-2000/faqs/9345

@LewSaber, I did some testing and you're right, I got 83 Groove Points and still fought Morrigan.
I made a save state two fights before the fourth one, and in one of my retries, I got 2 additional Perfect victories. (The screen on the actual match doesn't acknowledge it like CVS2, but the Victory screen does, on your overall score) so I think that a certain amount of Perfects, perhaps 2-4 might also be a requirement, I'll have to test again to keep track of how many I get. I'll also try and test your Super Combo finish at low health theory.

Oh, I neglected to add that bit about Super Combos, I just kept trying to get as many as I could because this game is quite stingy with Groove Points, haha. Thank you for the contribution, I'll add that onto the list!

Thanks for this guide!
I've just managed to get the Morrigan & Akuma encounter, I cheesed it with Joe: the CPU (on easy) doesn't seem to be able to block his slash kick, and the double hurricane upper gets a lot of counters (especially on Sim).
I very easily ended up with 100 GPS that way.

I've been following this guide. Very helpful. However, I think the conditions to face Evil Ryu and Orochi Iori may need further investigation.

I was under the Groove threshold (around 66 iirc) but still encountered Evil Ryu. While I was over the Groove threshold for Orochi Iori (around the 70s and at one point at the 80s) yet kept facing Nakoruru.

I remember when I finally encountered him (using Orochi Iori himself funny enough), my health was low and I pulled off a Super Combo KO on the last foe on Third Match. So that could be the additional requirement but I can't say for certain.

You'll need at least 4 Super Combo KOs to encounter any of the bosses anyway (it mentions this in game). You may want to add that.
