Simultaneous turns means you won't have to wait long between turns, though at the start of a turn when all AI players try to move at once, it means you can't act very quickly. (Only one unit can move on the strategy map at the same time, because it's a turn-based game.)
To speed this up, turn off movement animations in the options screen.
If your PC is slow, smaller maps are a great idea.
If you play on classical turns, you can just alt-tab after ending a turn and do something else. Again, turning animations off will improve turn speed a bit.
