Preface
As a note before you begin reading, as you probably already saw in the title and thumbnail, this guide is not for skiing.

This guide will not tell you how to do any flips, either. The game does a pretty good job of covering flips.

Please also note that this guide may not be complete; this is just what I've discovered from experimenting. If you'd like to try to find more, try using helicopter tickets to get up on a hot air balloon and start trying to find more grabs!

Thanks for taking the time to read this preface - on to the tricks!
Section 1: Side grabs
Side grabs are very easy to do, and half of them don't take any tweaking to do, but the easiest grabs are the most important. Two of the easiest grabs are the melon and the indy.

The melon is done by a heelside grab with your front hand.
It should look like this:
This means that if your right foot leads, your right hand (RT or space) will grab the heelside of the board. If your left foot leads, your left hand (LT or alt) will grab the heelside of the board. It doesn't take any tweaking to get this grab.

The indy is done by a toeside grab with your back hand.
It should look like this:
This means that if your right foot leads, your left hand (LT or alt) will grab the toeside of the board. If your left foot leads, your right hand (RT or space) will grab the toeside of the board. It doesn't take any tweaking to get this grab.

These grabs take a bit more effort and will require use of the right analog stick of the UHJK keys on the keyboard to tweak the board before your grab. I recommend using controller, but it's feasible to do these grabs on the keyboard.

Grabs that take a tweak are a little harder. The first two grabs that take tweaking are the stalefish and the mute.

The stalefish is done by a heelside grab with your back hand.
It should look like this:
This means that if your right foot leads, your left hand will grab the heelside of the board. To get this grab, tweak the board towards the heelside (right if your right foot leads, left if your left foot leads) and grab with the hand opposite the foot that leads (that is, your left hand (LT or alt) if your right foot leads and your right hand (RT or space) if your left foot leads).

The mute is done by a toeside grab with your front hand. It should look like this:
This means that if your left foot leads, your left hand will grab the toeside of the board. To get this grab, tweak the board towards the toeside (left if your right foot leads and vice versa) and grab with the hand on the side of the foot that leads (that is, your right hand (RT or space) if your right foot leads and your left hand (LT or alt) if your left foot leads).
Section 2: Nose and tail grabs
Nose and tail grabs are a little harder than side grabs because they all require tweaking, but they're not as diverse as the side grabs, as they don't tweak into other tricks. To do a nose or tail grab, tweak the board towards the nose or tail by using the I or K keys or pushing the right stick forward or back.

The simplest nose or tail grabs are the nosegrab and tailgrab.

The nosegrab is done by a grab to the nose of the board with the front hand.
It should look like this:
This means that if your right foot leads, your right hand (RT or space) should grab the nose of the board, and if your left foot leads, your left hand (LT or alt) should grab the nose of the board.

The tailgrab is done by a grab to the tail of the board with the back hand.
It should look like this:
This means that if your right foot leads, your left hand (LT or alt) should grab the tail of the board, and if your left foot leads, your right hand (RT or space) should grab the tail of the board.

The other two nose or tail grabs are the seatbelt and crail.

The seatbelt is done by a grab to the tail of the board with the front hand.
It should look like this:
This means that if your right foot leads, your right hand (RT or space) should grab the tail of the board, and if your left foot leads, your left hand (LT or alt) should grab the tail of the board.

The crail is done by a grab to the nose of the board with the back hand.
It should look like this:
This means that if your right foot leads, your left hand (LT or alt) should grab the nose of the board, and if your left foot leads, your right hand (RT or space) should grab the nose of the board.
Section 3: Tweaking grabs
Most grabs can be tweaked. Tweaking a grab turns the board a little relative to the rider and can make your grabs a little more diverse. The only grabs that can't be tweaked are the two-handed grabs. To tweak a grab and spice things up a little, move the right stick in a direction away from the initial position of the grab, or use the UHJK keys to do the same. If you do it right, your rider's position will shift a little and make your grab different.

Additionally, there are two grabs that are special when tweaked: the mute and the melon turn into the Japan and method, respectively.

The Japan is done by tweaking the mute grab to the heelside or tail of the board.
It should look like this:

The method is done by tweaking the melon grab to the toeside or front of the board.
It should look like this:
Section 4: Two-handed grabs
The most difficult and least flexible grabs are the two-handed grabs. They can't be tweaked. There are six in total, one of which doesn't require tweaking.

The simplest is the truckdriver, which is just a grab to both sides of the board at once without tweaking.
It should look like this:

The second simplest is the drunkdriver, which is a grab to both sides of the board starting with one grab on the opposite side. It should start in a stalefish, then grab with the second hand.
It should look like this:
Make sure you start with a stalefish: a mute will usually result in a different grab, covered later in this section.

The next two two-handed grabs are pretty simple too: the rocketair and the popair.

The rocketair is done by a two-handed nosegrab.
It should look like this:
First, tweak the board as if you were going to do a nosegrab or crail, then grab with both hands.

The popair is a two-handed tailgrab.
It should look like this:
First, tweak the board as if you were going to do a tailgrab or seatbelt, then grab with both hands.

The final two-handed grabs are difficult and inconsistent: the holycrail and mutail.

The holycrail is a cross between a crail and a nosegrab. The back hand grabs the nose before the front hand grabs the toe side of the nose.
It should look like this:
First, perform a crail, then grab with the other hand while still tweaking forward. Make sure you perform the crail first, otherwise you'll just do a rocketair.

The mutail is exactly what it sounds like: a mute and a tail grab. The front hand grabs the toe side before the back hand grabs the tail.
It should look like this:
First, perform a mute, then grab with the other hand. Sometimes this will produce a drunkdriver; I'm not sure what causes that. It's inconsistent.
Closing
I hope this guide helped you and even if it didn't, thank you for taking the time to read it. I'd like to reiterate that this list may not be complete: again, if you find any other grabs, let me know.

Ah, yeah, also, what we really need is a practice mode in the game where you are just suspended in a perpetual fall. That would help iron out what we're doing wrong without realizing so much faster.
