Every base game model has his own type of animations and lifestyle, so that description it to let you know what animations they have. the male will still be a male, but just with animations you normally see with a female model, but it looks just fine, nothing weird :) same goes for the female, I gave her the animations of the Young adult male, so she is a bit more manly, but it gits the type so again it's perfectly fine :)

Tourists should be possible with the itemclass changer mod. We just can't use the tourist animations since their not in the editor.

@Hyunanax: No tourists in the making. I'm not even sure if that's currently possible, I haven't seen them yet in the asset editor.
