Here are some important ones from my Surf server:

sv_staminalandcost 0
sv_staminajumpcost 0
sv_maxspeed 320
sv_gravity 800
sv_airaccelerate 1000 (150 can be used if you want a challenge, 1000 is easier)
sv_wateraccelerate 150
sv_friction 4.8
sv_accelerate 10
sv_maxvelocity 5000 (you can set this higher if you want, i think 5000 is enough for christmas)
sv_enablebunnyhopping 1
