You have at least to verify your game cache after the unsubscription.
But this only works for moddd/overwritten files already present in the original game.
Additional files (and AoE uses them massivly for its modding system) have to be deleted manually.
So do the following:
1) Unsubscribe
2) Delete Additional stuff (here it's easiest to delete the AoE\data\slp folder)
3) Verify your game cache
2) For Steam doesn't delete the mod file from your game\mods folder for any mod ever. Do that manually. This way you avoid steam getting confused by your mods status and the following bugs
3) Go to your game\data\slp folder and delete the four files MNTN1-4.slp
