There are 4 preset colour: red, orange, blue, and white, randomly chosen. You can pick custom colour by using Elektrix's Prop Painter mod

I really like those trains and also the prop, but how do I change/chose the colour for the prop train? They are always red when I build them and when I start the game for the next time, every carriage has a random colour.

- Now colour customisable!
