As @AlShegardy92 said, pawns assigned to doctoring simply will not automatically do specific other work types. Research and Fabrication are the two I noted so far as well.
Given that I don't use any other mods that tweak doctoring medicine, trying to isolate if it is a mod conflict is not something I took the time to do.
The bug is that if u have a colonist with doctor on. they will not do most other tasts "like fabrication or research". and if u remove the doctor job from them they will do the other tasks no problem

After playing with it for a couple days it seems to work.
