About the Sentry Buster, I didn't change anything yet.
The only melee Heavy Boss that appears in official mision is Captain Punch, and it has a 40% faster firing speed, so before the animations were even worse
For one I doubt you'd get this added by removing animations for weapons that the robots use in the game proper. I suggest instead to try and fix the animations themselves if you are capable of it.
Fixing the speed of animation sequences is good, but i have a feeling the Giant Heavy's melee speed was supposed to be slower than normal, considering they are huge robots and all.
Like the post below said, getting rid of the sentry buster's head hitbox would, while being true to the model, would not help for gameplay balance.
Otherwise most of what you have laid out should be definitely added.
Unlike the fix to Spy's hitboxes that was posted to the Workshop, this gamemode is basically PvE. I don't think it necessarily needs to be changed. You can't be a sentry buster on community servers either, unless you count the custom gamemode Stop that Tank!
Someone mentioned on the Spy hitboxes workshop page that Robot Engineer also have some hitbox issues. Valve fixed an issue with hitboxes on Engineer after the Mecha Update, but did not fix for the robot counterpart.
