I linked someone's file in the description who did a much better job than I did.
Replacements are purely client-side most of the time, as the game isn't going to force-download mods to the client. Replacements are typically limited by the white listed files in the game, on top of the client themselves needing to download the replacements.
Games like Synergy are an example of that, because if you use the server-side download to replace the Pistol, for example, it'll not work.
Do you mean replace as a client downloading a mod, or replace as a content creator making something new?
I don't use the default add-ons menu for reasons like that on top of it generally being trash to begin with. I have a lot of add-ons myself, but I only keep them enabled as-needed. This is what I use, and I think you'd get some decent use out of it as well.

The hands themselves are also pretty basic, since this was one of the very first animations I ever did. Someone one-upped me a while back, and I'd recommend those over mine any day.

The Physgun is a whitelisted model, but it seems to only-half-assedly work, like so many other things in GMod. It works for some people, and doesn't for others.
It's the same reason you can't replace the default player models, despite them being completely and totally ass. MaxOfSTD had Garry put a whitelist on the models to stop people from fixing his shitty work.
Did you unsubscribe while *not* in-game? If you unsubscribe while not in-game, the .GMA files are not deleted from your addons folder. Go into the console in-game and run the command "menu_cleanupgmas"
The Gravity Gun and Physics gun have their hold types controlled by compiled/embedded C++ code that as far as I'm aware can't be easily change by anyone except those with control over the game binaries.
However, if you were to code your own Lua version of the Gravity or Physics gun, you could easily use my hexed versions of the models as a model for it.

The screenshots were taken in Synergy, but that specific HEV skin is found on GameBanana; it's called something like HEV Mk.IV reskin in the HL2 hands skin section.

No one was going to make a penis joke until you said that. And yes, if you wanted to code a SWep version, I also uploaded a hexed version of the models so you could script with them.

GMod doesn't like when you replace the PhysGun so it might be a whitelisted file, or some other reason. I've had reports of it working and not working for different people.
I thought they used different models... but now that I recall it, you are right, the gravitational warp cannons do use the same model.
