Aha, fingers crossed, gundam isn't really a thing here on XCOM 2 but hey who knows, a gundam replacing that new class in shen's gift dlc would be pretty sick.

I'm on a break from flag making mate as I've been busy with other stuff, I'll put it on the list anyways and if no one has made it when I start doing it again, I'll see what I can do. :)
Unless I update it again to change the values, no. Your unit weight should stay to whatever number you assign it as.
XcomGameBoard.ini is the one you want and the weights look like this '+UnitWeight=<number>'. As for backstories, I really have no idea how to edit that, I usually just write them in myself, something simple or if its based of a character type in a bio that seems to fit with the lore. :D
So, it worked for me mate, I tried subbing to it myself then modified the values and tested in game. Definitely be sure to save the ini file, close and refresh your mods or alternatively refresh your game cache. As I said in the previous comment I already adjusted the weight values to all be 30 so you should have greater variation now. (USA is by default 40)
I should also note that soldiers spawned with zeon flags have no country of origin in thier backstory!
Hm that's weird, works for me when I modify the values, let me test it again mate. I've already updated the mod to lower the weights, maybe try resubbing or refreshing your mods in the client to get the new numbers.

It'd be nice if you would make some more from the "main"-Gundam, like the Earth Federation.
