You can replace it, then you would need to create additional textures for the rest of the Jal Shey / Zeison Sha variations. You can only replace the 3D model of a "class" of items, not the model of just one item.
I mostly try to look at existing things and somewhat match that, but you also want a mod item to last a bit longer. It's a balancing game, I'm also not that into stats, mostly winging it, so feedback is welcome.
Note: this update will not change items that you've already acquired, that gets locked/saved in your savegame.
None of the true robes have more than 3 defense, so not sure that's so balancing. Upping the str and dex seems fine. And yes, the price is a bit steep, I can change that.
I would recommend lowering the cost, or raising the stats, however. Defense to 4 and/or +3 to stat bump. Both would bring it a little closer to balanced.

Is the price too high? Are the stats too low? Both would probably be fair points. I made this 10 years ago, I didn't want to make mods that would be unbalanced/overpowered.
Planet order also plays a part.
Then you just type giveitem a_robe_88 or giveitem a_robe_89.
The files should be in a location like:
[drive]:\[steamfolder]\SteamLibrary\steamapps\workshop\content\208580\771509102\override
