That's a Disney thing... KOTOR and KOTOR2 where made long before their acquisition and thus this 'lore addition'.
You get red crystals from the dark jedi that attack you on every planet in that game and that also remained a point of confusion for me. You could say its red because that's a dark side action, but you don't get points from it.
Not sure what the lore suggestion is on only having red crystals drop. I mean lore-wise the crystals change to a red color because the force user's anger and hatred "bleeds" through crystal. Red crystals are largely unnatural, from what I understand.
It's a long shot, for sure, but Disney is never going to explore it, and we know incredibly little about Kinrath biology.
