If you're looking for a challenge, how about a shipping yard/port? With a bunch of containers, some containing items, maybe even a crane or two. It might be a bit too hard since there aren't really that many construction-esc items in the editor yet, but you could improvise or wait until the next level editor update to see what's added.

That lvl from golden eye where your on a boat to stop the stealth helicopter from being stolen would be cool. You would need lots of guns though, for it to be accurate lol.
