I think the table idea might work if there were a room dedicated to modded weapons, where tables are added dynamically. Meaning, every time we add a mod weapon, a new table is created for it. When we delete the mod, the table goes away.
The room would also have to grow dynamically, getting bigger as it fills up with tables.
Well, I have no idea how the system would work, I'm just pitching it as a proposal rather than a plan that I already know how to develop. I do believe that there'd have to be a limit to the amount of weapons on display, hence why I said 30 blank weapon stands as a rough guideline. At the end of the day though, it's a minor little niggle in an otherwise pretty well-polished system.
