Sky is black, menus don't open.
So I've just been trying to mod the game now the sky has gone black and I can't pause the game and open any of the menus

I've never run into those particular issues before. If you wanna upload your log to pastebin or something and link it I'll be more than happy to take a look. I'm curious as to what you were modding that would have that effect though.

Also since this is mod related I'm moving this to the modding subforum.
