Sadly I'm not anywehre skilled enough in the map making to help you. But I do want to warn you that the resulting map is likely going to be very very large (Canada is big, eh). If I remember correctly a few people on these forums have played on some Canada maps although I'm not sure if they are publicly available.

Unfortunately it misses Edmonton/Toronto, but covers slightly more north of the border! Our national passenger rail service connects to both before going east or west.

If you hadn't seen the Canada Transcontinental map before, you may have also not seen the Fraser Valley map. I know it's not coast to coast, like you asked, but it is certainly one of my favourites, really well balanced, and I'd strongly commend it to you.
