You could try 1 year is 1 year (the more recent version, published after mid-2017, older one is buggy) for more realistic slow aging and progress.
If you want some extra harshness, I'd recommend grabbing Tom Sawyer's "The North 7" at https://www.banishedventures.com (I'm not sure he uploaded it on Steam, I haven't checked.)
I just had a look, he has North 6.2 on the workshop. You can try that one and get familiar with it, then give the new version a try. North 7 even has the slow aging thing by default.
