hiding extra tools
is there a way to hide / disable these.. extra tools / toys like a brush to draw, a ray gun etc:

It is possible to do with a script. The player class has a function (SetInventoryEnabledForHand) that lets you control access to the quick inventory per player and hand. You would have to write a script that either detects when players spawn or polls for them, and runs that function for both hands.
