Sadly, its not possible, this is why mods are made only with those existing in game. Modders can't create new professions.

However, it is not practical to do so, and here is why:
There has not yet been found any way to set or edit the config of a profession.
This means that all other instances that would display the profession can not adopt a localisation string, icon etc (meaning, the new profession can't have it's own name and icon displayed in any game interface windows), and of course some hard coded functions screen tables for profession names so that buildings/worker with a new profession could never be included in a result.
it looks like you are telling it can be but then it can't, so it means it can't
So, to clarify: Professions can be created and they can be used in buildings - meaning: such a profession would be fully fuctional from the technical standpoint. Sounds great so far? Yes, BUT What can not be done is customization of a new profession for the visual game interface and for string search - meaning: It can not look like a "real" job - which is the reason why, answering OP Searchant 's question, it is never seen in any workshop published mods)
There are, after all, regular complaints about customfield crops not being displayed correctly by their visible string name when they are discovered in an expedition - Now imagine a mod with a profession that has no icon, no equipment, and is visible as "@prof_something@". People would not be too thrilled ;-)
That is why I wrote: it can, but it is not practical. Similar to how I can jump out of my 6th floor window to get to the ground faster, but it is not practical to do so :D
That is my personal view, sorry for not making that more clear. If you want to make a mod with one, you can of course, some experimentation is always good - but I would definitely not recommend it to anyone, as long as the configuration tables have not been decoded.
