I'm probably overthinking something but need help anyway

I've seen a bunch of builds with smaller than normal blocks using some kind of block, though I don't know what block it is.

It's a bit late, but in case you still haven't found out, those smaller blocks are called boxes.
They can be accessed in Build after enabling Expert Mode in the options.
