BTW, make sure you set your limits on sheep to 100 or infinity in the stables. If it's set low, some will be slaughtered automatically, regardless of age.
My experience with Continental Dawn was that, if I reached about 10 sheep, they started reproducing like mad. The same with all the other animals. I ended up with twice what I could handle in the stables, and I couldn't build new stables fast enough to prevent them from starving in the winter. I had no choice but to mark a lot of them for slaughter.
