Less blocks the better, doesn't help if the ship looks great but flies like a brick.

This also bleeds into the faction part having battlestar galatica faction would be pretty nice to bunch of cylons and such just jumping into the system flying to kill you how cool would that be?
Like to give it armor, and then balance it in a way that ship could still move and not be a potato.
Also turret placements, people leave turrets exposed or leave turret base(for custom looking turrets) exposed or as thin block, that lead to fast losing of turrets. You need to cover base of turret by armor after you download it as well, sometimes, it brakes the integrity of ship or you need to build a tumors arorund the turret.
Asymetrical ships are not that often appear, nothing wrong with having asymetrical ship, or for example left or bottom based ships, ships that good firing on sides rather than front,etc.
People stick to "shoe" or navy style of spaceships, meanwhile battles happen in all dimentions.

In conclusion - vertical ships and asymetrical ships.
Armor and turret blocks and integrity fields, the enemy tries to blow off the turrets and they have AI to help AIM! I don't. Jerks.
Ship size that takes into consideration building knowledge. A size 3 is iron, 5 is titanium, 6 naonite, 8 trinium, 10 xanium, 12 org and 15 avorion. I want to pull my hair out when I come across a size 5 ship with hangar bay. That mother ship is going to explode. :) I can see why someone would do it for mining only but it doesn't feel like a good idea for players on the rise. Maybe later when they want to build for earlier zones that are relatively safe. Sometimes mining iron and titanium is trivial and can provide a near constant source of money. But, I prefer stations for that.
I'd love for a brick faction. Just make all their ships covered in stone to mess with players going for lightning guns. Have their stations be a asteroid with all but the docks covered in stone. Dark as night. Call them dwarves. :) What's that ship? No clue, they all look the same. Crud, here comes the missiles and that one launched some fighters that look like little asteroids! We're so out of this sector.
First and foremost, when hunting ships on the workshop, I look for flatter tops, because it's a lot easier to see what the heck is going on with them. Wide, long, tall, don't care.. just a -reasonably- flattish top that I can see things along. Having a darn tower in the middle of my view instead does not help.
Then, I admit, I look for something at least moderately pretty to catch my eye, since if I want bricks, lozenges, ovals, or other simple shapes, that's what most of my stuff ends up being often enough, and I don't need help with that. ^_^
Next up is a big one for me. Turning speeds, acceleration, and deceleration. I keep seeing these amaaazingly pretty ships, described as extremely nimble, 6-10 slots... that handle worse than my "overly heavy and slow" 15 mega-size ships, to the tune of at most half the turning speed. And of the many things I can tweak on an existing ship, redoing the thruster setups is -not- one that's worth the time. So if it fails utterly there, I just move on completely, unless I'm heartset on the exterior design and willing to literally gut the _ENTIRE_ thing down to just the hull. Not often an urge, that. Also, the acceleration and deceleration. I can usually fiddle those some, if I have to.. but I have issue with anything that's got, say, 100+ acceleration.. and 20 deceleration. It's like, 'no. Just no. I'm not going to be forced to constantly think about flipping my ship around every time I want to slow down, period.'
Ship slot size vs material, that one is less of a big deal for me, but it nice to keep in mind just the same.
Block count! That's a big one. If the ship is giving warnings about block count on load, then me and friends are very unlikely to use it on our servers. If it's 'just' over, we can deal with it, but we're not likely to be flying any of the astoundingly beautiful art-ships. (Looking at you, Warhammer ships. Fecking -beautiful- stuff though! ^_^)
Aaand that leads to turrets. I'm used to adding turrets to any given ship, because one of my friends is absolutely heartset on running something like a hundred 0.5 size turrets on his ships. My only issue is wether or not I need to strip -off- a bunch of extremely high block count pretty turrets, to replace with our low block count ones. I mean, think about it. If you've got max block count turrets, that's 250 each there. 20 turrets, 5,000 extra blocks. 40 turrets, .. well, you get the idea. Adds up fast.
Finally.. my -favorite- ships are done up with something I've taken to doing for all my ships, which is we have our exterior layer, usually just hull, then a thin layer of stone, and a layer of armor. Stops zappity's after some exterior, cosmetic damage, stops railgun penetration, gives you the hull amounts you want, and lets things look nice too. That one's hard to figure out if it's been done without downloading and getting in depth looking at the ship, and is another one that's -not- worth the trouble of adding. Part of why I do a lot more of making my own ships these days. .. Now if I could just make better looking ships, heh.
So short version. - I look for ships that don't handle like a bathtub thrown into a tar pit, that don't have crazy block counts, and icing on the cake is actual armoring.
The fact that sphere/cube/brick ships can achieve all these things the easiest is why a lot of people look for them. Added note? The longer you can make your armor pieces seamless and thusly joined together.. the better their collision damage resistance, the higher the HP, the better your ship will survive. You don't -need- all the beautiful curves and angles you think you do. Trust me. I keep making that mistake! Flatter, then decorate -over-.
Also, the dwarf/rock idea? Heck yes. Make flying pyramid, brick, and even statues over brick cores. Also in closing, for someone wanting asymmetrical brick, may I present.. The broken bricks.

Most serious issue I saw in some workshop ships though is that quite a few of them are missing basic necessities...like an integrity field - or as someone already said at least _some_ armor. Also agree to everyone else already about the "flying bathtubs" issue - I would prefer a ship that is less beatiful if it is at least usable.

_FULL_ coverage structural integrity fields. It's not optional. Just do it. It's not hard.
Actually, for a tip on how to handle it if you just want one in the center or the like, select the SIF block, tilt the view completely upright and hover over the ship. Then widen and lengthen it to match the area and a bit more. Great! Now put the view to the side of the ship and do the same. Great! You know now how big it needs to be if you stuff it around the center of the ship. Can't do the center? Okay, put on your mirroring, and do the same idea again, adjusting to make sure there's a bit of overlap in the mirroring. Great! Now you know how big it needs to be if offset from the center. Tada, done. Heck, even works if you need to make a 'wart' on the top/bottom or both sides of the ship, that you then blend into the shape. Also, please. Don't add 200+ SIF fields of tiny itty bitty size that only cover the external hull at the outermost. It's wasteful, it adds more to the processing done on the ship, -and- it means once you break that bit of hull, the insides are weak as heck. Thank you all. ;)
