how to change province resources?

I'm sorry, i'm new to modding. Do I use the map editor? I'd like to know how to, for example, change a territory's resource from fur to iron or from stone to grain. something like that.

No, for changes at the start of the game you will want to go into the setup\provinces and find the province id and change it there.
Alternatively there should be a way to change it using scripts for changes midway into the game.
