Overhaul

I'm wondering if its possible to replace all the existing weapons and objects with essentially no options to be modded with similar but more fleshed out versions?

if you mean adding litterally anything, nope
not nearly enough mod support to mod current content as it, weapon stats and number of shots are completely fixed, all we can change are models
