Request: 2.5 MW Underground medium voltage wire

I've been searching the workshop for such a thing and to my surprise it doesn't seem to exist, probably for a reason unknown to me so maybe you can enlighten me?

This can't be done via the workshop. The only work around I have been able to come up with is to use high voltage substation.

I knew there were a explanation to it. Does your mod in mention actually fix this issue? Reading the comments it's mentioned it seems capped at the 2.5 MW? Is this just the intention and make you able to supply it with a single 5 MW high voltage wire?

If you connect a 5MW cable to the high voltage substation you will only get 2.5MW out of it. It is better than using 1.45MW cables and it does actually work but it is not a genuine solution to the problem.
