Is there a mod to add more opponents?
Say you want to do a 43 car NASCAR race for example, is there a mod that lets you have a bigger grid?

Unfortunately there is not, for example I would love to have all 40 of the official 1988 drivers on track at once in NASCAR 88 mod, but it’s not possible from modding.
