"You can extract sprites via the in-game menus: Pause > Customize > Resource Packs > (Select your own resource pack and press 'Tab') > Add files.
This brings you to a selection menu that allows you to browse all of the game's assets. You can filter them with Ctrl+F, select the assets you'd like to extract, and then hit "Add selected files" to save them to your resource pack in the appropriate paths. Then, you can directly edit the files and see the changes in-game."

I can verified that this indeed works, but instead of selecting the resource pack, I recommend make a new resource pack in the option so that it was easy to manage.
One thing that gave me a chuckle tho is that her file is placed on mods > Coldsteel, as a direct reference to "Coldsteel the Hedgehog" meme, and her DLC banner and icon is called "Coldsteel" as well. And I guess that make sense considering Miku was partially owned by Sega thanks to the Project DIVA series.

There is no Onyx gear and the character lineup ends at <character id="14"> Reaper, trying to add further entries for Miku or Synchrony chars has no effect ( Despite changes on Cadence working regardless )
Edit: Just found out that while the workshop gives no results, a mod to start with ballet shoes already exists on Synchrony's mod portal
