I'll say, create a new No Mods world (a testing world) and add only one Mod at a time, so add one Mod and load the world to see if all good.
+ add a second one if all good with the first one = slowy and surely to find more clues on what is going on.

1 - Select your save.
2 - Click the "Save as" button on the left.
3 - Change the save name to create a *copy.
4 - Withdraw or add one Mod at a time in the copy.
5 - Report to the Mod author (on WS item page) when broken Mod found so he can fix/update his Mod, always very kind to let him know.

Never test with your original save, better create a copy and fix the original save when solution found in the copy, this way you will not mess up your save.

The best would be to test by adding only that Mod to a new world and report on the Workshop item page if not working.
But, I recommend to join the Medieval Engineers community on Keen Discord, one very active Modder shared good patches for the current problems.
Just go to "help-medieval" channel once in and post your problem.
I am not a ME/SE Dev but Moderator community helper, game tester and they gave me the [dev] Tag after helping the community and the Devs for years so I can have admin rights to help on the Workshop.
(Steam Moderator role can't be admin)
I also collect all the most talked about every months on the new created forum discussions to add to my monthly report to Keen Team.
I do this since 2015 + test the game since 2013 and I help the community because SE is my Fav Sandbox game on Steam, ME is my second Fav Sandbox to create tho I prefer SE ;)
