it sounds like you have the basics under your belt so i'll just say that you dont NEED guilds or temples, it boosts their moods but it wont make them upset enough to cripple your forts on its own if good food, bedrooms and needs are met
easiest way to improve moods without a water fall is kitchen labor should NOT use the same food for both drink and food (so no plump drinks and snacks only 1) and go for at least fine if food is regularly staying over 1 per dwarf, if your ratio is like 1 dwarf to 50 meals you can go lavish.
NEVER cook tallow as this can be used for things like soap which helps moods big time.
with these things covered you should have on average green mood forts
edit: also double wall your bedrooms, having overlapping bedroom walls can lower the mood gain from dwarfs having good bedrooms as the increase from that specific wall will only go to one room, so wall wall, bedroom wall wall bedroom this in itself is great for mood bumping with no real investment
