There's a mod tool called DFHack which comes with a lot of really useful quality of life features that can help with stuff like automating your clothmaking and farming.
One of the tools I haven't messed with lets you slap down whole blueprints into the world.
That said, there's many MANY simpler building games than Dwarf Fortress. In fact, basically all of them are! Off the top of my head, Clanfolk, Rimworld, Craft the World, Banished or Dungeons might be more your style. Dwarf Fortress is a labyrinth both metaphorically and physically. There's no way to de-obtuse it I'm afraid.
